Lauki Kofta Curry Recipe
I had made this dish long time back, but was waiting for an opportunity to write it here. This was a pretty yummy dish, so make sure to take it down. Also, if you need printables of recipes, let me know.
So for the people who don't know what lauki is, lauki is Bottle Gourd. So we are gonna make balls (koftas) out of bottle gourd. I took this recipe online*.
Preparation Time: 45 Minutes
1. Wash, peel, and grate the bottle gourd.
2. Squeeze the grated gourd and remove the juice. Keep the juice aside. We will require it later.
3. Take the grated gourd and add gram flour, salt, and chili powder.
4. Mix and make small balls. If you add water in it, you will be able to shape the balls easily.
5. In a frying pan, deep fry or shallow fry the balls until they turn golden brown. Keep aside.
For Curry:
1. Make a smooth paste of tomatoes, onions, ginger, garlic, cashews, and green chilies. Keep aside.
2. In a vessel, put oil. Add cumin seeds and let them crackle.
3. Later, add the paste. Mix.
4. After the paste turns thicker, add turmeric, salt, red chili powder, coriander powder, and garam masala. Mix until the oil starts leaving the paste.
5. Add the bottle gourd juice. Add water. Stir.
6. Let it cook for few minutes. Taste and check if anything is missing and add it accordingly.
7. Add the kofta balls. Cook for some time.
Tada! Your dish is ready.
